A bunch of these prickly plants have been popping up in my garden area and other places. Can I eat it? If not, they are DOOMED!

It appears to me to be a type of thistle. Possible a type of sow thistle, or more likely milk thistle. Not poisonous, but not likely to produce anything you’d care to eat.
