Not a bug – but what is it?

This is greenery that came in a rose bouquet. I left in water, because I wanted to root it, but instead, little fringy-looking things have sprouted from the middle of the backs of the leaves. I thought they might be bugs, but they’re not. What the heck is this, and do I plant a leaf to grow my own? Thanks!
