I found these in my yard. They have roots about 3-4 inches long with red-stemmed leaves that are shaped like spinach. Are they edible?

I wonder if these are young shoots of pokeweed? Check online images and warnings.

I’d be really wary of eating tubers just found in the yard. The leaves sound like beets though and the tubers COULD be immature beets…

I’m with Walter on this one… And while I grow pokeweed for the photo ops, I don’t eat it… There’s lots of plants I can eat, without eating something that might make me sick or worse.
