Canning Fruits and Vegetables

Q: Many people are into food gardening on a small scale and need advise and tips on preserving their food.

I would like to suggest a portion of your radio show be devoted to food gardening and include tips and questions on canning and freezing.

We seem to have lost the ole’ time knowledge for raising and preserving food like our grandparents knew so well.

A: What a good idea!

I’m surprised I hadn’t thought of it before….but perhaps I’m scarred by the memory of countless hours in my Mother’s un-airconditioned kitchen, sweat streaming from both of us, blanching, peeling, boiling and cooling hundreds of quarts of vegetables.

I’m not sure I can keep up with all of the newer standards for safe food preservation, so I located a very helpful website.

The University of Georgia sells a book and DVD called “So Easy to Preserve, which is in its fifth edition.

In addition, you can download all sorts of how-to factsheets on canning, freezing, drying and pickling.
