What is this?

I’ve got quite a few of these in my yard. The leaf kinda resembles a dandelion, except for the color. The blossoms are pink and grow in a pod on top of a single stalk.

I guess my main question is, is it edible? If so, I’m going to put them to good use my salads!! 😉

    We have 1 and 1/2 acreas of flowers bushes and fruit trees but every year we have a lot a holes about 2″. I heard from friends its probably moles. How can I get rid of them?
