What is this?

Notes:

I’ve got quite a few of these in my yard. The leaf kinda resembles a dandelion, except for the color. The blossoms are pink and grow in a pod on top of a single stalk.

I guess my main question is, is it edible? If so, I’m going to put them to good use my salads!! ;)
